Origin and curiosity
The origins of Sicilian cannoli with fresh ricotta cream can be traced back to both the Arabs and the Romans, who for centuries dominated Sicily by introducing delicious foods and recipes. Etymologically, the "cannolo" refers to the river reed, around which the dough (peel) was rolled giving it the classic cylindrical shape. The dessert was born with certainty in the Arabic Kalt El Nissa (literally "Castle of the women"), or the ancient Caltanissetta, and it is precisely here that various stories of precise origin are born. There are two stories that revolve around the birth of cannoli: one of profane origin and one sacred. The first claims that the Emir had concubines inside his palace, who delighted in the preparation of new and delicious dishes. Inspired by the Roman recipe, they would have created cannoli, a dessert whose shape was a clear reference to the phallus of the Emir. The sacred story, however, has it that in a convent in Caltanissetta, the nuns prepared this dessert on the occasion of Carnival, decorating it with pieces of chocolate and chopped almonds. The recipe, however, is probably of Roman origin: it was Cicero who defined the dessert "" tubus farinarius, dulcissimo, edulio ex lacte factus ", or" "Farinaceous cannolo made of milk for a very sweet food". Only later was it transformed by the Arabs to resemble what our classic cannolo is today.
